How do we eat healthy on the road?
One of Lennon’s favorite snacks is rice cakes. We put peanut butter and chocolate on top, as well as hemp heart “sprinkles”, because it has a ton of protein and vitamins, and sometimes coconut flakes. Or it’s also really good with slices of bananas or strawberries on top.
We’ll add hemp hearts to a ton of random stuff. Like rice cakes, or cereal, oatmeal, salads, smoothies, whatevs. They have just a slightly nutty taste, but not very strong.
We’ll buy a chocolate peanut butter spread like this in place of Nutella, because it’s dairy free, has a decent amount of protein, and WAY less sugar than Nutella. You can usually find it by the regular peanut butter in most stores. Lennon really likes it.
We buy a lot of noodles like this made from chickpeas or lentils. They have a ton of protein, and no gluten. That was actually Lennon’s dinner tonight, a bowl of plain chickpea spaghetti noodles with a handful of spinach. Sometimes we’ll put just a bit of olive oil or butter in the noodles, and nutritional yeast. But usually she likes them plain.
Speaking of which, nutritional yeast is one of the best hacks. You can dump this stuff in any dish that would normally have cheese in it, and it’s freakin delicious! It’s another good source of protein, and has tons of vitamins. We put it in pretty much everything.
Lennon’s favorite snack is popcorn with salt, butter (dairy free), and a boat load of nutritional yeast! We have this little collapsible silicone popcorn bowl that you just put a bit of raw popcorn kernels in and pop in the microwave for a couple minutes. Then salt, butter, nutritional yeast, and boom! Popcorn!
Just Egg is our favorite plant-based egg substitute (right, Lia???). Although it is pretty expensive, so we don’t use it a ton. We also use extra firm tofu to make a type of “egg” scramble that’s really yummy.
And Yumm bowls! We’ll make a big batch of just the Yumm sauce from that recipe, and put it on basically everything. We end up making a lot of bowls that are some variation of either rice, quinoa, or couscous for a base with black beans or garbanzo beans, then grill up whatever veggies we have in the fridge, add a protein like tempeh or tofu or whatever, and dump some Yumm sauce on it, and it’s delicious every time.
Rice and quinoa are definitely staples for us.
These peanut butter energy bites are a really yummy snack! They’re basically like no bake cookies, but actually healthy. We use dark chocolate chips with no dairy. And they’re super easy to make! Lennon likes them a lot too.
